食譜 ~ 沙茶彩椒炒肉絲 (Stir fried pork & color pepper with shacha sauce)

打邊爐最興用沙茶醬點,但實用唔晒一樽,不如諗下有咩餸加埋嚟用,最後參考咗通少食譜。

材料:
豬肉1磅左右, 切絲
蒜蓉適量
紅, 黃, 綠椒各半個, 切小塊

汁料:
沙茶醬 3 湯匙
蠔油2茶匙
水1湯匙
醃料:
生抽(醬油)1茶匙
粟粉(玉米粉)1茶匙
鹽 1/8茶匙
紹酒 1茶匙
糖 ½ 茶匙
白胡椒粉 少許

做法:
1 · 豬肉先用基本醃20分鐘 
2 · 快火落油起鑊, 先把爆香蒜蓉, 再落豬肉炒至8成熟, 加沙茶醬兜勻 
3 · 再加三椒, 蠔油, 水兜勻調味, 至炒熱三椒上碟


Ingredients:
1 lbs pork, sliced
some minced garlic
1/2 red, yellow, green pepper, sliced

Sauce:
3 tbsp shacha sauce
2 tsp oyster sauce
1 tbsp water

Marinade:
1 tsp light soy sauce
1 tsp cornflour
1/8 tsp salt
1 tsp Shao Xing wine
1/2 tsp sugar
white pepper, a bit

Method:
1. Mix pork with marinade for 20 mins.
2. Heat the pan with oil in high heat. Stir fry the garlic. Stir fry the pork until 80% done. Add shacha sauce and mix it well.
3. Add the peppers, oyster sauce and water. Mix the ingredients and adjust the taste if necessary. Stir fry the pepper until done.
