食譜 ~ 金菇雞肉炆米粉 (Braised rice vermicelli with enoki mushroom and chicken)

老公病咗要食粥, 咁炒個麵等我同阿囡配粥食下, 通常我整上海粗炒, 不過今次轉一轉, 炆米濕濕地阿囡又啱食, 隨手响屋企揾咗現有材料, 發現都幾啱阿囡食, 可以加咩材料都得。

材料:
米粉 1 1/2 個
雞肉 100g (切絲)
金菇 1/2 包
椰菜 80g (切絲)
蒜頭 少許

醃料:
生抽(醬油)1茶匙
鹽 1/8茶匙
紹酒 1茶匙
糖 1/2茶匙
白胡椒粉 少許

汁料:
生抽(醬油)1茶匙
老抽 1茶匙
糖  1/2 茶匙
鹽  1/4茶匙
水/雞湯 100ml
做法:
1. 用醃料醃雞肉30分鐘
2. 米粉放入滾水中灼至剛熟,過冷河

3. 燒熱油鑊,加雞肉絲,用中火炒熟。盛起待用。
4. 再加油,爆香蒜蓉,下椰菜炒至軟身。如椰菜太乾,可酌量加少許水。
5. 加金菇炒熟, 再加雞肉和米粉炒勻。6. 最後加汁料,繼續兜炒,炆煮一會, 不要煮得太乾身,保留一點點汁,即成。
 
Ingredients:
1 1/2 rice vermicelli
100 g chicken (shredded)
1/2 package enoki mushroom
80g cabbage (shredded)
some garlic
 
Marinade:
1 tsp light soy sauce
1/8 tsp salt
1 tsp Shao Xing wine
1/2 tsp sugar
white pepper, a bit

Sauce:
1 tsp light soy sauce
1 tsp dark soy sauce
1/2 tsp sugar
1/4 tsp salt
100ml water/chicken stock

Method:
1. Mix chicken with marinade for 30 minutes.
2. Soak rice vermicelli in boiling water until soft, rinse under cold water
3. Heat the pan with oil in high heat. Stir fry the chicken until done. Take it out for later use.
4. Add oil and stir fry garlic. Stir fry cabbage until soft. If cabbage is too dry, add some water to cook.
5. Add enoki mushroom and stir fry until done. Add chicken and rice vermicelli and mix well.
6. Finally add sauce and stir fry. Then simmer for a while. Don't fry until dry and keep a little bit of sauce. Serve.
