食譜 ~ 豉椒排骨炒河粉 (Stir-fried flat rice noodles with pork ribs in black bean sauce)

尋晚本來醃咗排骨用嚟炒涼瓜,點知臨時唔使煮咁多餸,今晚又想簡單煮, 未試過煮河粉, 於是諗到嚟炒河粉, 下次再挑戰乾炒牛河先。

材料:      

排骨 20元
青椒  、紅椒各半個               
洋葱 半個
蒜頭  少許
蒜蓉豆豉醬  2 湯匙
炒河粉   1斤

醃料:
生抽(醬油)1湯匙
鹽 1/4茶匙
 糖 1茶匙
白胡椒粉 少許
麻油 1茶匙
 
做法:
(1)    排骨洗淨醃一會 (15分鐘)
(2)    , 紅椒去籽切塊; 洋葱切
(3)    燒紅鑊, 滾油, 下河粉, 加少少水炒勻上碟
(4)    下蒜頭豆豉爆香, 加排骨炒至半熟,  加入清水煮滾, 轉中細火煮7至8分鐘
(5)    加豉油和糖調味
(6) 下洋葱, , 紅椒炒3分鐘
(7) 淋上河粉面即成

Ingredients:
$20 Pork Ribs
1/2 green pepper and red pepper each
1/2 onion
some minced garlic
2 Tbsp black bean garlic sauce
1 jin fried flat rice noodle

Marinade: 1 Tbsp light soy sauce 1/4 tsp salt
1 tsp sugar
some white pepper
1 tsp sesame oil

Method:
1) Wash pork ribs and mix with marinade.
2) Remove seeds of green and red pepper and cut into pieces. Cut onion into pieces.
3) Heat the pan with oil and stir fry flat rice noodles. Add some water and mixed well. Put into bowl for later use.
4) Add the garlic and black bean garlic sauce into the pan. Stir fry pork ribs until half done. Add water until it is boiled. Turn heat to medium and cook for 7 to 8 minutes.
5) Add light soy sauce and sugar for seasoning.
6) Add green and red pepper and onion and fry for 3 minutes.
7) Put the mixtures on top of flat rice noodles and serve.
