最近追看了一套日劇, 叫「逃避可恥卻有用」,因為講女角為家庭主婦,所以成日都見男女主角在家食飯, 其中一集講到瓦片蕎麥麵, 是男主角的家鄉山口縣地方料理之一, 用來盛裝的餐具是屋頂瓦片。女主角之後在家煮了給他吃。好, 讓我都試一試。參照了cookpad及其他網頁, 雖然做不到炒到脆香的效果, 瓦片變成了碟, 不過蕎麥麵都好好食,而且難度不高,準備時間短。
材料:
牛肉薄片150g
青蔥3枝(切小段)
雞蛋2個
砂糖少許
油適量
海苔絲適量
檸檬片4片
綠茶蕎麥麵2人份
(可用其他蕎麥麵替代)
紅蘿蔔泥適量
市售蕎麥麵醬汁120ml
味醂1湯匙
壽喜燒醬汁2湯匙
做法:
1. 蕎麥麵水煮到還保有一點硬度時起鍋,用篩網瀝乾後備用。
2.製作蛋絲:兩顆蛋打散,加入砂糖和少許的油,煎成蛋片,捲起後切成細絲。
3.牛肉跟壽喜燒醬汁放入鍋中炒,至水分收乾後起鍋。
4.製作醬汁:味醂和蕎麥麵醬汁放入耐熱容器中混合,微波加熱50~60秒。
5.平底鍋熱油,拌炒瀝乾的蕎麥麵;炒好的麵放到預先熱過的瓦片上,再依續鋪上蛋絲、牛肉、青蔥、海苔絲和檸檬片,最後放上一些紅蘿蔔泥即可上桌!
6.將檸檬汁擠入步驟4加熱過的醬汁內,就能夾蕎麥麵沾取醬汁享用囉!
Ingredients:
150g thinly sliced beef
3 pieces green onion (chopped)
2 eggs
some sugar
some oil
some nori seaweed
4 pieces sliced lemon
soba noodle flavored in green tea for 2 persons
(other flavor can be used)
mashed carrots
120ml sauce for soba
1 Tbsp mirin
2 Tbsp Teriyaki sauce
Methods:
1. Cook the soba noodles for a little shorter than tim suggested. Drain in colander for later use.
2. Egg preparation: Mix the eggs with sugar and oil. Make the usuyaki tamago (thin and flat omelette) and shred.
3. Stir fry the beef with Teriyaki sauce until dry. Take it for later use.
4. Sauce preparaion: putmirin and soba sauce into a microwave safe bowl. Heat for 50 to 60 seconds by microwave oven.
5. Heat the pan with oil. Stir fry soba noodles. Put the noodles on roof tile. Then put shredded egg, beef, green onion, nori seaweed and lemon on top. Lastly add the mashed carrots on top and serve.
6. Squeeze the lemon juice into warm sauce mixture mentioned in step 4. Serve soba noodles with the sauce.
