奶奶俾咗幾個椰皇我, 飲椰青水外, 諗起出街食甜品都好鍾意叫燉椰皇食,咁不如自己試下。最難應該係開個靚椰皇, 第一次開都開到, 不過唔夠街買靚!
材料: (一個份量)
椰皇 1個
椰皇水 100毫升
蛋白(大) 2隻
鮮奶 100毫升
砂糖 1湯匙
做法:
1. 椰皇頂部切走尖端,反轉。
2. 菜刀用近刀柄的角位,向椰皇的底部敲擊(距離中心約一吋半的地方)。源著裂縫繼續劈開,兩至三刀就可撬開。倒出椰皇水備用。
3. 撬開後用大刀修整凹凹凸凸的椰殼,用小刀修飾突出的椰肉。
4. 椰皇注入熱水備用,此動作可使椰殼暖一點,蒸煮時快熟些。用一個飯碗,墊廚房紙固定椰皇位置。
5. 鮮奶加入糖,用小火煮至微熱放涼備用,蛋白加椰皇水拌勻,緩緩倒入鮮奶徐徐拌勻。
6. 椰皇的熱水倒走,過篩注入鮮奶蛋白,用錫紙或耐熱保鮮紙包好蒸 30分鐘,熄火焗 15分鐘,取出襯熱食用或冷藏後食用均可。

1 coconut
100ml coconut water
2 egg white (large)
100ml milk
1 Tbsp sugar
Method:
1. Cut off the top of coconut shell. Turn it upside down.
2. Use the knife angle near the handle to tap the bottom of coconut shell(about half an inch from the centre). Cut it by following the crack and split the bottom out in two or three tries. Pour out the coconut water and set aside.
3. Cut the edge of coconut shell to make it smooth.
4. Put some warm water into coconut shell. This will make it warm and make the steaming time shorter. Use a bowl with kitchen paper on top to hold the position of coconut shell.
5. Add sugar to milk and simmer until low heat. Cool it and set aside. Mix egg white with coconut water. Then add milk slowly and mix it well.
6. Pour out the warm water inside coconut shell. Pour the milk mixture through a sieve into it. Cover with the aluminum foil or heat-resistant wrap and steam for 30 minutes. Off the heat and let it sit for another 15 minutes. Serving can either be warmed or chilled.
