食譜 ~ 冬菇釀豬肉 (stuffed shiitake mushroom with minced pork)

抗疫時間,日煮夜煮,唯有煮多點不同的菜式來解解悶。


材料:
冬菇 8 隻
免治豬肉 180g
葱 適量
鹽 少許
麵粉 少許
麻油 1湯匙

醃料:
生抽(醬油)1茶匙
糖 1/2茶匙
白胡椒粉 少許
粟粉(玉米粉)1茶匙

調味料:
生抽(醬油)1湯匙
水 2湯匙
酒 1湯匙

做法:
  1. 冬菇浸水洗淨去蒂,免治豬肉先用基本醃20分鐘;
  2. 在冬菇內側薄薄的撤上麵粉,然後平均地釀入豬肉,在釀好的冬菇豬肉上再撤上一層薄薄的麵粉;
  3. 下鍋油,油熱後先把冬菇的一面用中火煎2分鐘; 
  4. 然後翻轉把豬肉的一面煎2分鐘;
  5. 放入調味料再蓋上鍋蓋用小火煮約4分鐘至豬肉熟透,放葱上碟。
Ingredients:
8 shiitake mushroom
180g minced pork
Some spring onion
Some salt
Some flour
1 Tbsp sesame oil

Marinade:
1 tsp light soy sauce
1/2 tsp sugar
white pepper, a bit
1 tsp cornflour

Seasoning:
1 Tbsp light soy sauce
2 Tbsp water
1 Tbsp rice wine

Method:
  1. Soak and wash the shiitake mushroom and cut the stem. Mix minced pork with marinade for 20 mins. 
  2. Sprinkle flour thinly inside shiitake mushroom. Stuff the mushroom evenly with minced pork. Sprinkle flour thinly over the stuffed shiitake mushroom with minced pork.
  3. Add oil to pan. After heat, fry mushroom side first with medium heat for 2 mins. 
  4. Turn them over and fry pork side for 2 mins.  
  5. Add seasoning, Put the lid and cook with low heat for about 4 mins until the pork is done. Add spring onion and serve.
